We use only the best cuts of beef from locally farm-reared cattle and guarantee that our beef is hung for 28 days to ensure succulence. But don't just take our word for it, Tam Cowan said when he visited: The three cuts of beef delivered to our table - one plain fillet and two surf'n'turf efforts topped with (peeled) king prawns - were truly excellent and, without a word of a lie, this is the standard I would expect from my three favourite Las Vegas steakhouses - Gallagher's, Smith & Wollensky and Ruth's Chris.
